Discovered, isolated and carefully selected by Brasserie Dalons, Fleur Jaune is a unique indigenous yeast, originating from the island of La Réunion — a spectacular tropical paradise in the Indian Ocean, near Madagascar. This exceptional yeast takes its name from the Fleur Jaune des Hauts (Hypericum lanceolatum), a rare endemic plant
from the high altitude regions of the island. Fleur Jaune embodies the rich biodiversity of Reunion Island, offering an innovative and unique brewing experience.

Known for its extraordinary biotransformation capabilities, this yeast transforms hop compounds into complex and vibrant aromas, blending tropical fruits, exotic spices and subtle floral nuances. It brings
incredible depth and unique creativity in each brew, making it a must-have for brewers looking to explore new horizons and enhance the wonders of nature.
