It all started on an ordinary evening, a glass of wine in hand. In that quiet moment, a bold idea emerged: why not explore the treasures that the exuberant nature of
What could Reunion Island offer in terms of fermentation? This thought, both simple and visionary, marked the starting point of an adventure at the crossroads of science and craftsmanship.
Driven by the richness of the Reunion Island terroir, I embarked on an exciting quest: to identify an indigenous yeast capable of capturing the soul of the island in each fermentation. For months, I explored nature, collecting samples of wild flowers, tropical fruits and fertile soils, in search of the ideal organism to bring this vision to life.

After weeks of intensive laboratory research, I made a remarkable discovery: a unique strain of yeast of the genus Saccharomyces cerevisiae, native to Reunion Island.
Its exceptional properties, in particular its ability to produce complex aromas thanks to
the biotransformation of hop compounds, immediately revealed its immense potential.
I named it Yellow Flower, in homage to the local flower that played a key role in this process.
This yeast stood out for its ability to metabolize specific aromatic compounds of hops, transforming thiols and other precursors into intense floral and fruity aromas.
These unique qualities have made it possible to create beers with rich and subtle aromatic profiles, deeply rooted in the exceptional terroir of Reunion.

With my intern Francesco Chiaverini, we joined forces to develop craft beer recipes that showcased Fleur Jaune. The results far exceeded
our hopes: beers that are not simple drinks, but a true ode to the biodiversity and cultural identity of Reunion.
Today, Fleur Jaune is much more than a yeast. It is a pioneer, an innovation that opens an infinite field of possibilities in the world of fermentation. This adventure is proof that a simple idea, born from a moment of reflection, can evolve into a discovery capable of transforming an entire domain, while celebrating the unique character of the Reunion Island terroir.

But a discovery, however fascinating, can only bear fruit with the right support. In September 2024, driven by the desire to push this project even further, I decided to contact WHC Lab, a recognized leader in the field of yeast solutions for craft breweries. I was convinced that their expertise and analytical means could allow us to better understand and enhance the potential of Fleur Jaune. From our first discussions, their enthusiasm and professionalism confirmed that I had knocked on the right door.
Thanks to their expertise, we were able to delve deeper into Fleur Jaune’s analyses, highlighting exceptional characteristics and even greater potential than I had imagined. WHC Lab not only supported the research, but also saw in this yeast a unique opportunity for the brewing world. Together, we decided to take a decisive step: making Fleur Jaune a yeast accessible to brewers around the world.

Today, I am proud to announce that, starting in March 2025, Fleur Jaune will be available in liquid form, in partnership with WHC Lab Dublin. This collaboration represents much more than an achievement: it is a symbol of what an idea born from a simple moment of reflection, combined with hard work and trusted partnerships, can achieve.
It is also a historic moment: for the very first time in France, an indigenous yeast taken directly from nature will be available on the market. Fleur Jaune thus becomes a pioneer, not only for its unique qualities, but also for the message it conveys: that of the importance of promoting our terroirs, respecting biodiversity and always pushing the limits of creation.
With WHC Lab, we are eager to see this yeast transform your fermentations and enhance your beers. This project, beyond numbers and analyses, is a human, scientific and artisanal adventure. And we are convinced that Fleur Jaune will continue to write its story through brewers around the world.
